Can I record using accompaniment tracks?

Yes, but you'll first need a master use license from whoever owns that accompaniment track.

Permission to modify or duplicate a sound recording is separate from the permission needed to record the underlying song. You can usually identify the sound recording's owner by locating the ℗ symbol. Note that the owner of the sound recording is usually not the same as the owner of the song.
